Crunchy oats sunflower seeds chocolate chip cookies!

You would never guess, that I found this recipe on a book about baby food (from Annabel Karmel).. I did adapt the recipe a little, like I always do and that is the beauty of cooking, so many variations to please every taste!

These cookies are super crunchy as there are sunflower seeds, oats and cane sugar in them. Usually I add cranberries, but this time I used chocolate chips to spoil my children!

Let me give you the ingredients:

150g of room temperature butter (or 1 minute in the microwave)

160g of cane sugar

100g of sunflower seed

100g of flour

1 teaspoon of baking powder

1 teaspoon of salt

80g of whole oats

50g of chocolate chips

To prepare the dough I used the kitchen aid with the flat beater.

Turn on the oven at 180 degrees.

Beat the butter (150) and the sugar (160) until smooth, add then all other ingredients except the chocolate chips and mix well. Add then the chocolate chips and mix carefully.

Grab a spoon and dip in the dough, press it on the spoon with your other hand and form it in a sort of flat ball, then slide it on a baking sheet with baking paper. The spoon will help you form cookies of more or less the same size, good for cooking them evenly. Leave some space in between as they will flatten while baking.

Bake for 15 minutes or until golden brown on the edges.

Serve with milk or your favorite coffee!!

You can use a variety of other things instead of the chocolate chips: raisins, cranberries, nuts,..
